When I’m in India I find as many ways as possible to consume fresh coconut water. This coconut lemonade using coconut water and mint is one of them. It is really easy to make, and incredibly refreshing on a hot day (it was 107 degrees when I visited!)

Fresh coconut water is best for this recipe. My parents garden in India has coconut trees, so I always get my coconut water fresh. They slice open the top of a coconut, drain out all the water inside, then cut the coconut in half to scoop out the delicious coconut flesh/meat.
